Standard Fillets

Arrived in good condition with being packed very well and still cold.

Thank you for lovely Salmon. It is some years since we last ordered salmon from you. It was great to have such fresh salmon and we will order again despite the high freight. It arrived at 5.15 pm on Tuesday after having been in the courier van since 11.15 am. The ice packs were close to thawed but luckily still closed. Although a courier issue I feel you should know about it.

We usually get 1/2 doz fillets per order - always fresh and delivered promptly - The first one goes into the smoker on delivery and the others into the freezer for special occasions. when we thaw our fillets we coat with a couple of hand-fills of brown sugar and plain salt in equal parts and let it thaw in the fridge overnight - this draws quite a bit of the moisture from the fillets, then we clean off the brine, drizzle with honey and cook in smoker box on the barbecue - one meal hot with around 1/2 the fillet chilled and kept for following day - the leftover cold smoked salmon is terrific in a quiche or tart, or just on it's own - The smoked salmon fillet taken whole, and garnished with sliced limes and pineapples is always a hit on the Christmas dinner table - It never lasts long, but we know where we can get some more !
