Maple Glazed Salmon
2 T maple syrup
2 T hoisin sauce
1 t Dijon mustard
¼ t cayenne pepper
½ t coarsely ground black pepper
4 x 150-200g salmon portions (about 1 inch thick)
- Preheat oven to 200⁰ In a small bowl, combine the first 5 ingredients and stir well.
- Place salmon, skin side down, on a baking sheet coated with cooking spray. Brush the tops of each portion with maple mixture.
- Bake for 10 to 12 minutes or until fish flakes easily when tested with a fork, brushing with maple mixture after 5 minutes and again after 10 minutes.
