Maple Glazed Salmon

Ingredients:

2 T maple syrup

2 T hoisin sauce

1 t Dijon mustard

¼ t cayenne pepper

½ t coarsely ground black pepper

4 x 180g salmon portions (about 1 inch thick)

Cooking spray

 

Method:

  1. Preheat oven to 200⁰ In a small bowl, combine the first 5 ingredients and stir well.
  2. Place salmon, skin side down, on a baking sheet coated with cooking spray. Brush the tops of each portion with maple mixture.
  3. Bake for 10 to 12 minutes or until fish flakes easily when tested with a fork, brushing with maple mixture after 5 minutes and again after 10 minutes.
