Marry Me Salmon
Ingredients:
2 T olive oil
4 x 160g pinboned salmon portions, skin removed
2 garlic cloves, crushed
1 T fresh thyme leaves
Pinch dried chilli flakes (optional)
¾ C chicken stock
¾ C cream
125g sun-dried tomatoes, drained, finely chopped
½ t lemon zest
¼ C finely grated parmesan
Fresh basil leaves, to serve
Method:
1. Heat 1 T oil in a large, deep frying pan over medium-high heat. Cook the salmon for 1 minute each side or until golden. Transfer to a plate.
2. Heat the remaining oil in the frying pan over medium-low heat. Add the garlic, thyme and chilli (if using) and cook, stirring, for 1 minute or until fragrant. Stir in the stock, cream, sun-dried tomatoes and lemon zest. Bring to a simmer. Sprinkle with the parmesan and stir to combine.
3. Return the salmon to the pan, gently nestling it into the sauce. Simmer, uncovered, for 4 minutes or until salmon is just cooked through.
4. Season and scatter with basil. Serve immediately.
